Diverse Latin American flavours are created using contemporary and traditional cooking techniques that showcase the very best South American fruit and vegetables. Executive Chef Diego Fernando Sanchez Vargas continues to focus on seasonal ingredients with his circular, low-waste philosophy, whilst incorporating a rich selection of superfoods throughout the menu, right down to the sides. Espárragos y Ajo Negro, a vitamin and nutrient-packed plate of broccolini, asparagus and black garlic sauce and Wok de 25 Verduras, a mixture of seasonal vegetables sautéed in a sweet and savoury sauce, sit pride of place on the Acompanamientos.
