Carna was the brainchild of award-winning Dario Cecchini, the famed celebrity butcher from Panzano in Tuscany’s Chianti area. Cecchini discovered his mission after taking over the family business from his father in 1976: to preserve the art of butchery with the notion that all portions of meat may be used when cooked properly, reducing waste and encouraging sustainability.
