Ossiano’s Grégoire Berger Collaborates With Asia’s 50 Best Female Chef Pam Pichaya Soontornyanakij, For An Exclusive Four Hands Dinner

In an exciting culinary collaboration, chefs Grégoire Berger and Pam Pichaya Soontornyanakij of Potong, Bangkok, will host an exclusive four hands dinner at Ossiano, Atlantis, The Palm, on Tuesday 21st May. Inspired by a five-element philosophy: salt, acid, spice, texture, and Maillard reaction (the chemical process of reducing sugars that brings distinctive flavour), diners will be able to indulge in an exclusive 10-wave menu, meticulously crafted and mastered by the duo.

Against the stunning backdrop of the Ambassador Lagoon at the one-Michelin-starred Ossiano, hero dishes from Grégoire will include langoustine tom yum uni, Galician sea urchin, Thai style and sticky rice with mango and curry ice sorbet. Whilst Pam will showcase ‘Parts of Banana’, with ingredients sourced locally from Bangkok, ‘Potong’s Pad Thai’ and ‘Evolution of Crab’, featuring Mud Crab, known for its creamy roes and Blue Crab offering a sweet and rich flavour.

Multi-award-winning and internationally renowned, Chef Pam has opened several successful restaurants and bars over the years. She is the first-ever and youngest female chef to receive both a Michelin star and the ‘Opening of the Year’ award from the Michelin Guide simultaneously. Pam is also the fastest and youngest Thai female chef to receive Asia’s Best Female Chef award from the World’s 50 Best Restaurants. From New York to Bangkok, Pam has become a critically acclaimed chef, food consultant, and television personality, making her one of the most recognised faces in cooking in Thailand today.

Since its opening in 2021, Potong, a progressive Thai-Chinese restaurant helmed by Chef Pam, has garnered several prestigious accolades, including debuting on Asia’s 50 Best Restaurants list at No. 17 in 2024 and earning a spot on the extended list of The World’s 50 Best Restaurants in 2023. With Pam skillfully weaving her family’s stories into a thought-provoking tasting menu featuring five Elements and five senses across 20 dishes, while spotlighting Thai-Chinese cuisine with creative spins on traditional recipes, she is certainly one to watch. Potong, which is the fourth generation Traditional Medicine House situated in the heart of Yaowaraj and embodies the spirit of late-night Chinatown Hangouts in 1960s New York, is Pam’s latest venture. Translated as “simplicity”, Chef Pam takes an inventive approach to Thai-Chinese flavours with a modern interpretation of classic dishes.

Grégoire, the visionary behind Ossiano, has consistently pushed culinary boundaries, creating innovative cuisine that pays homage to ocean treasures and coastal flavours. As well as ranking No. 87 in The World’s 50 Best Restaurants 2023 extended list, Ossiano retained its Michelin star in Dubai’s 2023 Michelin guide and earned its place in the prestigious La Liste in November 2023 at No. 8, scoring 96.00%, the highest score in the UAE. Earlier this year, Ossiano retained its four-toque status in the prestigious Gault&Millau UAE Guide 2024 and ranked No. 3 in the 2024 Middle East and Africa’s 50 Best Restaurants list.
