On a Sunday morning:
- Nikki Beach Resort & Spa’s Director of Culinary and Creation, Chef Claudio Cardoso tends to a vegetable garden that he and his team, have cultivated at the vast oceanfront venue
- Once the tides settle in, Matthew Maynard, Nikki Beach Resort & Spa’s Food and Beverage Operations Manager, prepares himself for a special dive, where he scours the seabed for scallops
- Chef Claudio takes a stroll across the property to pick a selection of edible flowers that he can incorporate within meals and beverages
This has become a typical day at Nikki Beach Resort & Spa Dubai, thanks to Chef Claudio’s latest innovative venture aptly titled Down-To-Earth, an exclusive dining journey that aims to intentionally disrupt the typical approach to food in a thought-provoking and aesthetically pleasing way.
Chef Claudio, along with the Nikki Beach Dubai team, are working to establish a connection between wholesome, homegrown ingredients and how diners react and interact with the uniquely presented dishes.
Occurring every other Thursday evening, starting on Thursday July 8, from 8pm to 10pm, Nikki Beach Resort & Spas Down-To-Earth dinner is defined by Chef Claudio’s mission to craft creations using premium quality, seasonal ingredients that are sustainably sourced from local and international farms, the Nikki Beach Garden and the sea itself. Even the beverage selection is crafted from ethically made and sustainably minded brands whose stories will lift your spirits (in more ways than one!).
With over fourteen sharing-style dishes, priced at AED 350 per person, Down-To-Earth pioneers sustainable dining through vibrantly colored, peak-season produce, along with elements from the land and sea. With the belief that making an impact starts at the dining table, the dinner series embraces its proximity to the seaside by largely incorporating raw seafood, at its purest form.
With similar food activations in many Nikki Beach locations around the globe, we are striving to integrate the freshest locally grown ingredients in each dish we serve. Special menus have been curated with only KM0 products including fresh fish, meat and colorful veggies inspired by our chefs worldwide. “Food has become a pillar of culture,” stated Chef Claudio. “As a sustainably conscious chef, I am a champion of ingredients that do not have to travel far to reach your plate.”
