As part of Atlantis, The Palm’s showstopping Culinary Month, WHITE Restaurant will host Michelin one-star chef, Theodor Falser for two exclusive Four Hands Dinners on 30th November and 1st December. The delectable, eight-course set menu pays homage to nature, using only hand-picked ingredients and locally sourced produce.
Led by Chef Ibrahim Ata, Chef de Cuisine of WHITE Restaurant, and Chef Theodor Falser of the Engel Hotel and Spa in the South Tyrolean village of Welschnofen, diners will begin their evening with freshly baked farmer bread with linseeds and Alpine herbs, before sampling a selection of four starters.
To kick off the cold starters, guests will be served raw red prawns accompanied by artichoke, pomegranate, salicornia and topped with fermented apricot dressing; followed by the black tea marinated wagyu beef carpaccio coupled with mango, avocado, sesame seeds and soya dressing.
For the hot starters guest will relish a unique risotto dish which is mixed with stinging nettle and bone marrow, and sprinkled with a fine layer of popped grains raspberry powder; followed by homemade langoustine and lobster filled ravioli, which sits on a bed of squid tuile, lobster bisque and chervil velouté.
The main event is set to leave a lasting memory with two dishes; the carrot butter poached turbot fillet plated with carrots, forest garlicde and puntarella, as well as a honey glazed roasted duck breast dish, which is dressed with a vanilla celeriac purée, fondant potato and five spice duck jus.
To conclude the evening, guests will enjoy a showstopping dessert consisting of persimmon, sparkling yoghurt and brown butter ryebread ice cream.
