La Dame de Pic Dubai, the elegant enclave of French dining by the world’s most Michelin-starred female chef, launches an exclusive Champagne pairing for the season, perfectly complementing the new winter dishes crafted by Anne-Sophie Pic.
With a focus on refined flavors, impeccable techniques, and seasonal ingredients, the champagne pairing menu is priced at AED 1,600 as an addition to the Harmony menu. It offers an exquisite symphony of artistry and indulgence, enhanced by a carefully curated selection of champagnes to elevate each flavor. Additionally, the winter dishes are available exclusively in December and January.
Guests can begin with starters that set the tone for sophistication and creativity. The Onion Tartelette, a delightful combination of onion and pink pepper soufflé, is elevated with black truffle and chartreuse. This dish is complemented by Leclerc Briant, Rosé Extra Brut which accentuates its rich and aromatic profile.
A new edition of the signature Les Berlingots will feature pasta parcels filled with 24-month-aged Comté, complemented by Khudri dates and a topinambour consommé infused with coffee and ginger, delivering a symphony of flavors in every bite. The Blanc de Craie Champagne from Henri Giraud will enhance the complexity and depth of the coffee and ginger flavour.
For mains, the menu offers a choice of stunning dishes. The Wild John Dory, cooked over embers and served with a cauliflower and tsukudani terrine, finished with a saffron and bergamot beurre blanc. A Pin Brut Champagne from Chapoutier & Anne-Sophie Pic with bright acidity and citrus notes is paired to complement the delicate flavors of the fish.
Guests craving hearty and bold flavors can choose between the Venison, a red deer loin delicately perfumed with white miso and sobacha, served alongside whiskey and chestnut dauphine and caramelized salsify, matched with a robust Krug Rosé Brut that enhances its bold profile. Alternatively, the intricate Pigeon Pithiviers, an indulgent pastry filled with pigeon, foie gras, and pickled blackcurrant, subtly perfumed with Voatsiperifery pepper and amaretto, is paired with Krug as well to balance its rich and savory elements.
End your culinary experience with a choice of exquisite desserts perfectly complemented by Ratafia Champenoise Solera 1990, which enhances the fruity and nutty notes. The Apple Tatin features Reinette apple cooked with Batak caramel, accompanied by golden compote, raw cream, and bergamot granita, while the Local Fig offers a harmonious pairing of confit fig with combava vinegar, hazelnut ice cream, and saffron foam.
