Kicking off the culinary journey with traditional Japanese flavours, the
Hosomaki served with chu-toro and leek and Kobe Edamame, tossed in savoury Kobe wagyu fat and shichimi togarashiawaken the palette.
Next, 99 Sushi’s aromatic ‘Capumiso’ soup, inspired by a cappuccino,captures the traditional umami miso flavours with a touch of opulence.
Guests will move on to a line-up of sushi favourites made with the freshest ingredients including, the Atlantic Blue Lobster maki with wakame seaweed, cucumber, and yuzu, the spicy Matsuri tuna roll topped with jalapeño sauce, the Toro flambé nigiri with the finest Kaluga caviar, the Alaskan king crab gunkan and the Langoustine nigiri, cooked in Kobe a5.
Amongst the main courses, the perfectly cooked signature 99 Black Cod infused with vibrant red miso steals the show. To complete the experience, the 99 Yuzu Cheesecake served with Kunafa ice cream takes taste buds on a tour of the eastern hemisphere with notes from East Asia and the Middle East.
