Dragonfly Takes Flight – A New Japanese Dining Destination By Bulldozer Group

Bulldozer Group announces the launch of Dragonfly, its newest Japanese concept, by chairman Aleksandr Orlov in collaboration with Michelin guide-selected chef Reif Othman, with the kitchen to be led by a renowned in the Middle East – Chef Vladimir Kim. Set to open this autumn at The Lana – Dorchester Collection, Dragonfly promises to bring together the most original and curated Japanese flavours, fused with bold strokes of Pan-Asian cuisine.

In Japanese culture, dragonflies symbolise transformation and renewal. This spirit of metamorphosis is embedded in Dragonfly’s concept, where each course represents a journey of flavours, celebrating the beauty of evolution in dining. The menu unfolds like a vibrant exploration, reminiscent of an Asian market, offering an array of tastes, from the briny sweetness of sea urchin to the zesty brightness of yuzu, the smoky allure of charred miso, the invigorating bite of shiso leaves, and the savoury richness of miso and soy. Complementing these aromas is a wide selection of fresh fish and seafood, carefully chosen to ensure the highest quality and authenticity in every dish. Notable among these are the signature dishes such as the celebrated Beijing Duck, and the tempting Bikini Sandwich crowned with otoro and black caviar. On the comfort-food front, the menu features a flavour-packed selection of dim sum and the ever-popular Duck Gyoza, elevated with foie gras and cherry hoisin sauce.

Reflecting Dragonfly’s spirited ambience, the extensive sake and shochu options, totalling over 80 varieties, set the stage for what will become UAE’s largest collection, accompanied by a sake sommelier to guide guests through this impressive selection with expertly paired recommendations. Dragonfly also boasts one of the widest ranges of Japanese whisky in the region, further enhancing the exceptional dining event.Additionally, the restaurant’s ambitious wine program aims to establish the world’s premier showcase of Asian wines within the next six months. Working with exclusive importers and unique producers, Dragonfly is sourcing the finest offering from across the continent, meticulously curating wines that offer a full immersion into Asian culinary traditions. This evolving collection is complemented by classic European profiles and esteemed New World labels, each chosen to harmonise perfectly with the complex flavours of Japanese and pan-Asian dishes, elevating the dining encounter through daring and innovative pairings.

Under the silent flutter of a dragonfly hovering from above, the interior design draws inspiration from traditional Asian elements and hyper-modern aesthetics. With astonishing 8-metre-high ceilings and authentic Japanese relics such as vases and Kokeshi dolls, the space exudes ceremonial beauty and cultural depth. The central red glass bar, adorned with a dramatic dragonfly sculpture, and the open kitchen enhance the dining experience by allowing visibility into the culinary process, adding to the immersive atmosphere.

By night, Dragonfly transforms into a radiant after-dinner occasion, with renowned guest DJs curating an eclectic and energetic ambience. The mezzanine becomes the epitome of elegance, offering a curated cocktail menu, perfect for a late-night experience.

Overlooking the stunning Dubai skyline and Burj Khalifa, the venue flaunts a sophisticated and relaxed mood. Reflecting the values and heritage of Japan, Dragonfly seamlessly blends the harmony of zen and the vibrancy of oriental aesthetics. It’s a culinary haiku celebrating the intricate flavours found in Japanese cuisine.
