Legendary Italian butcher Dario Cecchini has opened his first Dubai restaurant, and Carna threw open its doors on Thursday May 20. Located on the 74th floor of the brand-new SLS Dubai Hotel & Residences in Dubai’s Business Bay, Carna in Dubai marks the famed Italian butcher’s follow-up to the first Carna, located at SLS Baha Mar in the Bahamas. An eighth generation butcher, hailing from the Chianti region of Tuscany, Italy, Cecchini is passionate about waste-free cooking and sustainable produce, and has honed his expertise over more than 43 years. Must-try dishes at Carna Dubai include Chianti sushi, Cecchini’s spin on tartare, using his own olive oil, and Tuscany’s renowned bistecca alla Fiorentina – said to be one of the butcher-chef’s most acclaimed dishes.
