The khaugallis of India are more than just food streets; they are the beating heart of Indian cities, where flavors tell stories of generations and spices paint memories on the palate. From Mumbai’s chaat-laden lanes to Delhi’s tangy parathas, these bustling corridors are an irresistible dance of aromas, sizzling stoves, and voices sharing laughter over plates. Bombay Borough’s signature dish in November as part of its monthly Culinary Episodes is a Truffle Dal Dhokli highlighting the comfort and warmth of Gujarati cuisine. The traditional dish uses comprises soft dumplings bathed in a rich spiced lentil sauce representing a hug in a bowl passed down with love for generations. The venue elevates the classic offering by utilizing delicate layers of house-made tagliatelle, made of the classic Dhokli dough, and infusing them with the aroma of precious black truffles. The comforting lentil sauce is simmered to perfection and the mushroom chili mousse provides a touch of elegance with its smooth texture and subtle heat adding a playful counterpoint.
