Jean’s Avocado, caponata, baby spinach
Specially curated by Michelin-starred Chef Jean Imbert, this signature dish features a deliciously crumb-fried avocado served on a bed of baby spinach, drizzled with a delectable vinaigrette. Upon cutting the avocado, it is stuffed with a cured egg yolk at the centre and sauce vierge which is a classic French sauce made from diced tomatoes, olive oil, fresh herbs and lemon juice.
