Shvili, Dubai’s beloved Georgian restaurant, is proud to announce the launch of its innovative new menu, created collectively by two Georgian chefs: Lika Mardaleishvili, Head Chef at Shvili Dubai Hills Mall, and Goga Jikia, Head Chef of Shvili Nakheel Mall. They have partnered to create a menu that honours the rich traditions of Georgian cuisine while infusing each dish with a modern twist.
Titled “New Georgia,” the menu celebrates Georgia’s historical flavours by adding fresh ideas and ingredients to evolve Georgia’s beloved well-known dishes into something new.
Among new dishes on the ‘New Georgia’ menu is the Baked Bell Pepper with Nadugi, a delightful blend of cottage cheese, adjika, and mint. The menu also introduces new salads like plum and gorgonzola cheese, with a delicious combination of Georgian spices and walnuts covered in a cherry and red adjika dressing, that promises to delight with every bite.
The menu also features a new version of the famous Khinkali stuffed with white button mushrooms, truffle paste, and parmesan cheese sauce, which is the perfect starter if shared. Try out new main courses like the Chakapuli stew with Oyster Mushrooms and Tarragon or the Slow-Cooked Lamb Shoulder served with demiglace sauce; both are hearty and delicious. Finish your visit with the Spiced Pear dessert with Hibiscus Tea, cinnamon, coriander, honey, lemon, and walnuts.
